Ingredients
- I always bake 1 extra potato to scoop out and discard the skin, for extra filling for the others.
- Preheat oven to 400 degrees. Wash the potatoes, then pierce a couple times with a knife on the very top (only pierce where they are cut on the top part). Put in the oven, place straight on your oven r
- Scoop out all the flesh of the potato with a spoon into your mixing bowl, being careful to get it all, but yet not ruin the skin :)
- Now make mashed potatoes! Add about 3 T. of butter, salt and pepper to taste. Then while mixing add small amounts of milk at a time to get it to the right consistency. Optional: Half n Half and it mak
- 1 st- Fill the inside of the skin shell half way with the mashed potato mixture.
- 2 nd- Top with Shredded Cheddar Cheese (you can use half of a cheese slice also)
- 3 rd- Top the cheese layer with another mashed potato layer.
- Put back into a 350 oven for about 30 minutes. When done, put cheese on top and put back in oven until melted.
- Optional: Can add bacon bits and chives if you would like.
