Ingredients
- 2 1/2 tablespoons paprika
- 2 tablespoons salt
- 2 tablespoons garlic powder
- 1 tablespoon black pepper
- 1 tablespoon onion powder
- 1 tablespoon cayenne pepper
- 1 tablespoon oregano
- 1 tablespoon thyme
- 3 to 4 pounds thick-cut country-style pork ribs
- 1 cup cider vinegar
- 2 to 3 tablespoons butter
- 1 tablespoon fresh lemon juice
- 1 teaspoon onion powder
- 2 cloves garlic, minced
- salt and pepper to taste

Step 1
To make dry rub:
In a small bowl combine the paprika, salt, garlic powder, black pepper, onion powder, cayenne pepper, oregano, and thyme. (You can substitute a pre-made spicy rub.) Apply the rub generously to all sides of the ribs, and let stand for 30 minutes at room temperature.
To make mop sauce:
Combine vinegar, butter, lemon juice, onion powder, garlic, salt and pepper in a saucepan and heat on stove until butter is melted.
Prepare grill for indirect heating at no more than 275-300, or place ribs on a roasting rack in the oven at the same temperature. Cook the rubs until the internal temperature registers 160 degrees, at least 2 hours. Baste the ribs every 20 minutes with the mop sauce. Once the ribs are cooked, apply your favorite BBQ sauce and cook another 5 minutes.
