Ingredients

  • 1 lb boneless, skinless chicken breast 1/2 box of whole wheat pasta of choice
  • 1 red onion, chopped
  • 2 cloves garlic, minced
  • 2 pints grape tomatoes
  • 1 cup chopped basil
  • 1 cup parmesan cheese
  • 2 cups spinach or arugula
  • S&P
  • poultry seasoning
  • evoo

Preparation

Step 1

Season chicken with salt, pepper and poultry seasoning. Cut into chunks. Sautee over medium heat in evoo until browned on all sides.

Meanwhile, bring salted water to a boil and cook noodles according to pkg directions.

Add red onion and garlic to chicken. Saute until onion is soft. Add grape tomatoes, put on lid and simmer until tomatoes are popped. 8-10 minutes. Stir in 1 cup of pasta water. S & P, and red pepper.

Drain pasta and add to tomato mixture. Stir in the basil, spinach or arugula, and parmesan. Toss to combine
