Ingredients
- 3 cloves garlic, smashed and finely chopped
- 2 T white vinegar
- 2 shallots, thinly sliced
- 3/4 c loosely packed dill, chopped
- 1 English cucumber, peeled and grated
- 2-1/2 c geek yogurt
- 1 T olive oil
- 2 T lemon juice
- 1 t kosher salt
- 1/4 t pepper

Preparation
Step 1
Combine garlic, vinegar, shallots and dill in food processor and pulse until finely chopped but not puréed.
Pour mixture into med bowl with grated cucumbers and add yogurt. Fold together with rubber spatula, adding olive oil and lemon juice. Season liberally with salt and pepper to taste. It can be stored in airtight container in fridge for up to a week.
