Ingredients
- 1 lb. baby carrots
- 2 medium onions, sliced
- 2 ribs celery, diced
- 4 garlic cloves, peeled
- 3 lbs. bone-in chicken
- thighs, skin removed
- 1/2 cup white cooking wine or chicken stock
- 1 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 tsp. dried basil
- 1/2 tsp. dried marjoram
- 2 Tbsp. chopped fresh parsley

Preparation
Step 1
1. Place carrots, onions, celery, and garlic in bottom of slow cooker.
2. Lay chicken thighs on top. Pour wine or broth over chicken.
3. Sprinkle with salt, pepper, basil, and marjoram.
4. Cover. Cook on Low 4½–5½ hours, until chicken registers 165° on a meat thermometer and carrots are tender.
5. Sprinkle with fresh parsley before serving.
