Ingredients
- 1 garlic clove
- 1 cup dry white wine
- 1/2 pound Swiss Cheese coarsely grated (2 cups)
- 1/2 pound Gruyere cheese coarsely grated (2 cups)
- 2 tablespoon flour
- 1/4 teaspoon salt
- 1/4 teaspoon nutmeg

Step 1
Rub the bottom and sides of pot with the garlic clove.
Bring wine to a simmer in a fondue pot or a heavy saucepan on stovetop over medium-high heat.
Toss cheeses in flour in a large bowl. Add cheese mixture to wine in 4 batches, stirring each batch with a wooden spoon until melted before adding the next batch.
Continue simmering, stirring constantly until mixture is well blended and smooth, 1 to 3 minutes. Stir in salt and nutmeg.
If mixture is too thick, stir in 1 1/2 - 2 tsp lemon juice. If too runny, add more cheese or 1/4 tsp cornstarch. Set fondue pot over sterno flame on table. Serve with: Apples, Pears, French or Italian Bread, cooked meatballs, Veggies, Dried Apricots.
