Ingredients
- 9 eggs separated - Med (if using extra large use 7)
- 1 1/8 cup sugar
- 1 1/8 cups flour - sift with
- 2 1/4 tsp baking powder
- 4 1/2 tbsp. very strong coffee (not coffee granules)
- 1 1/2 tsp vanilla
- Filling
- 12 to 16 ounce container cool whip with 2 caps of maple extract or more to suit taste
- or
- 1 pint heavy cream (whipped with 2 tsp maple extract and 6 to 8 tbsp. confectioners sugar

Preparation
Step 1
Separate eggs. Beat whites stiff, set aside.
Beat egg yolks well, add sugar gradually, beat well.
Add flour, baking powder, coffee and vanilla.
Fold in well beaten (stiff) egg whites.
Bake in a tube pan (greased and floured).Bake 325 in middle rack of oven approximately 45 minutes or until top springs back when lightly touched.
