Ingredients
- 1 small butternut squash or 1/2 large butternut squash
- 3 T butter
- 2 tsp. maple syrup
- 1/2 tsp. vanilla extract
- 1/4 tsp. ground nutmeg
- Sea salt and pepper to taste
Preparation
Step 1
Preheat oven to 350°. Cut squash in half lengthwise and scoop out seeds. Place squash halves cut side down in a baking dish with enough water to cover the bottom (about 1/2 inch). Poke a few holes with a fork in the skin of the squash. Cover and bake 1 hour in a preheated oven for about 1 hour or until fork tender. Scoop squash from skin into a bowl and mash/whip in butter, maple syrup, vanilla and nutmeg. Season with salt and pepper to taste.
