- 1 high quality roast beef

Preparation
Step 1
Preheat oven to 450F
Remove roast from fridge for 30 minutes.
1. Place roast in a shallow roasting pan, Oven-sear in preheated oven for 10 minutes.
2. Reduce temperature to 300F, for 30minutes per pound of beef.
3. Cover with foil for at least 20 minutes before carving.
For a 3.63lbs roast and a 1PM lunch
10:10 - remove roast from fridge for 30 minutes
- preheat oven to 450F
10:40 - oven sear for 10 minutes
10:50 - reduce temperature to 300 roast for 30 minutes per pound
- 3.65 = 100 minutes Well-done 160F
12:30 - remove from the oven and cover with foil for 30 minutes
1PM - eat
