Ingredients
- 1/2 LB bay shrimp
- 1 TBL fresh chopped parsley
- 1 tsp fresh chopped sage
- 1 tsp fresh chopped garlic
- S & P to taste
- 8 fillets petrale sole
- 1 TBL olive oil
- 1 tsp capers
- 1/4 C sliced black olives
- 1/2 C chopped green olives
- 2 lg. fresh plum tomatoes, chopped
- 1/2 C dry white wine
- S & P to taste

Preparation
Step 1
season bay shrimp w/ parsley, sage, garlic, S & P
divide shrimp mix. evenly among sole fillets, placing a mound in center
of each fillet
roll each fillet up & place seam side down in oven-proof baking dish
SAUCE
heat olive oil in saute pan
add capers, olives & green onions
saute & add tomatoes, wine, S & P
simmer 10-15 min
pour sauce over fillets & bake @350 for 15 min
