Ingredients
- 2 LBS zucchini (abt 4 medium)
- trimmed & cut into 1" chunks
- 1 TBL olive oil
- 2 tBL prepared pesto
- salt to taste
- freshly ground pepper to taste

Preparation
Step 1
place a baking sheet on middle rack of oven
preheat oven to 500
toss zucchini w/ oil in lg. bowl
spread zucchini on preheated baking sheet in single layer
roast until beginning to brown
5-7 min
turn zucchini & continue roasting until just tender
7-9 min more
return zucchini to bowl
add pesto, S & P
toss to coat
