  • 2 LBS zucchini (abt 4 medium)
  • trimmed & cut into 1" chunks
  • 1 TBL olive oil
  • 2 tBL prepared pesto
  • salt to taste
  • freshly ground pepper to taste

Preparation

Step 1


place a baking sheet on middle rack of oven
preheat oven to 500

toss zucchini w/ oil in lg. bowl
spread zucchini on preheated baking sheet in single layer
roast until beginning to brown
5-7 min
turn zucchini & continue roasting until just tender
7-9 min more
return zucchini to bowl
add pesto, S & P
toss to coat
