Ingredients

  • 1 lb. chicken, cut in 1 inch cubes
  • 1 lb. andouille sausage, sliced
  • 28 oz. diced tomatoes with juice
  • 1 large onion, chopped
  • 1 large green pepper, chopped
  • 1 C. chopped celery
  • 1 C. chicken broth
  • 2 tsp. dried oregano
  • 2 tsp dried parsley
  • 2 tsp. cajun seasoning
  • 1 cayenne pepper
  • 1/2 tsp dried thyme
  • 1 lb. frozen cooked shrimp w/o tails

Step 1

In crock pot, combine chicken, sausage, tomatoes with juice, onion, green pepper, celery and broth. add seasonings.

cook 7-8hours on low or 3-4 hours on high. Stir in shrimp during the last 30 minutes.
