Ingredients

  • CABBAGE ROLLS
  • 1 Large head of green cabbage
  • 2 pounds of ground beef
  • 2 eggs
  • 1 medium onion, minced
  • 2 garlic cloves, minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1/2 cup raw long-grain white rice
  • TOMATO SAUCE
  • 2 tablespoons butter
  • 1 clove garlic, finely chopped
  • 1 medium onion, chopped
  • 2 15 ounce cans tomato sauce or 1 32 ounce can whole tomatoes, pulsed in a food processor.
  • juice of one lemon or 2 tablespoons apple cider vinegar
  • 1/4 to 3/4 cup light brown sugar
  • Salt & pepper to taste

Step 1

PREHEAT OVEN TO 350f
1. Fill a large pot with water and bring to a rolling boil. Add cored cabbage and allow to simmer until the leaves are easy to remove. Remove all possible leaves. You will need about 16 leaves.
2. Chop remaining cabbage and add it to the tomato sauce.
3. Mix ground beef, eggs, onion, garlic, salt, pepper and rice.
4. Using a cookie scoop, place one scoop in each leave and roll into a cabbage roll. Place seam side down. Refrigerate until ready to use.
5. Over medium heat, melt the butter, saute the second onion until soft and golden. Add the garlic and saute for 2 more minutes, add the reserved 1 cup chopped cabbage and saute for about 1 minute more.
6. Add tomato sauce, lemon juice, brown sugar, salt and pepper and stir to combine. Increase the heat until it comes to a boil, simmer for 5 minutes.
7. Line the bottom of the 13 x 9 glass dish with a layer of sauce, add the cabbage rolls, seam side down, cover with remaining sauce.
8. Bake in a 350F oven for 2 hours.
