Buffalo-Lime Stuffed Peppers

Ingredients
- 3 Anaheim or Pasilla peppers, cut in half, seeds removed
- 2 cups diced or shredded cooked chicken breast(I used 1 rotisserie chicken)
- 1/2 cup finely diced white onion
- 1 jalapeño pepper diced very small(optional, adds heat)
- 1/4 cup chopped fresh cilantro
- 1/2 cup plain greek yogurt
- 4-6 Tbs. Buffalo flavor sauce, depending on preferences
- 1/4 tsp garlic powder or a fresh minced garlic clove
- 1/2 Tbs fresh squeezed lime juice
- 1 diced Avocado
- Sea Salt & Pepper to taste

Preparation
Step 1
1.Preheat oven to 350 f
2.Boil large pot of water
3.Place Anaheim Pepper halves in the boiling water for just 3 minutes. Promptly remove.
4.Drain peppers well.
5.Combine all remaining ingredients in large bowl.
6.Stuff peppers evenly.
7.Bake at 350 for about 20-25 minutes.
8.For softer peppers, bake longer.
