Ingredients

  • Mix the following in a jar and shake well:
  • 1/2 c olive oil
  • 1/2 c white vinegar
  • 3 T chopped fresh parsley
  • 3 T minced green onions
  • 3 cloves garlic, minced
  • 1 (2 oz) jar diced pimentos, drained
  • 1 t sugar
  • 3/4 t dried basil
  • 1/2 t salt
  • 1/2 t pepper
  • 1 8 oz block cream cheese
  • 2 6 oz packages medium cheddar Cracker Cuts cheese

Preparation

Step 1

Cut cream cheese lengthwise and then slice horizontally into 1/4" squares.
Repeat with the cheddar cheese brick if necessary.
Spread cream cheese between each layer or cheddar cheese and stand up on its edge to form two rows side by side.
Pour the marinade over the cheeses, cover and refrigerate overnight or at least 8 hours.
Prior to serving, spoon excess marinade back over cheeses.
Serve with crackers.
