Ingredients
- 1/2 cup (2 ounces) shredded Parmesan cheese, divided
- 1 cup milk
- 2 eggs
- 1 tablespoon butter, melted
- 1 cup all-purpose flour
- 1/4 teaspoon salt

Step 1
1. Preheat oven to 425 degrees F. Coat a 6-cup muffin tin with cooking
spray.
2. Reserve 1 tablespoon Parmesan cheese.
3.
In a large bowl, combine all remaining ingredients, beating with a wooden spoon until smooth.
Pour batter into muffin cups and sprinkle with reserved Parmesan cheese.
4. Bake 25 to 30 minutes, or until golden and puffy.
5. Cool slightly before removing from muffin cups. Serve immediately.
