Ingredients
- PUDDING
- 4 egg yolks
- 1/4 cup cornstarch
- 2 T sugar
- 4 cups half & half
- 1/3 cup sugar
- vanilla wafer cookies (48)
- BANANAS FOSTER SAUCE
- 3 sliced bananas
- 1/3 cup dark rum
- 1/4 cup brown sugar
- 4 T butter
Preparation
Step 1
Whisk egg yolks, cornstarch and 2 T sugar together. Bring half & half & 1/3 cup sugar to simmer. Whisk half of the cream mixture into the egg mixture, then return to pan. Cook on medium heat, stirring until mixture thickens.
Make the bananas foster sauce - mix all ingredients in skillet and cook on medium/high heat until bubbling & slightly thickened.
Layer half the pudding, a layer of cookies, the foster sauce, then another layer of cookies and rest of the pudding in a 2 quart (9x12) dish. Refrigerate overnight to set. Top with whipped cream to serve.
