Ingredients
- 1 Tbs canola oil
- 1 onion, chopped
- 1 garlic clove, crushed
- 3 cups finely-chopped cooked chicken
- 4 cups low-sodium chicken broth
- 1 can no-salt-added crushed tomatoes - (28 oz)
- 1 can pinto beans - (15 1/2 oz), rinsed, drained
- 1 can black beans - (15 oz), rinsed, drained
- 1 can chopped jalapeño peppers - (4 oz), drained (or 2 oz for less heat)
- 1 Tbs chili powder
- 1 Tbs ground cumin
- 1 tsp salt, (optional)
- Freshly-ground black pepper, to taste

Preparation
Step 1
Over medium-high heat, heat the oil in a large pot. Add onion and cook until limp, about 5 minutes. Add garlic and cook, stirring, 1 minute. Add all remaining ingredients and bring to a boil. Reduce heat and simmer, stirring occasionally, until thickened (approximately 50 to 60 minutes).
