Mama's Cherry Pie

Ingredients
- Filling
- 2 1/2 c canned Cherries (drained?) Probably red tart cherries
- 1/4 c Juice (assume from cherries)
- 2 1/2 T Tapioca
- 1/2 T Butter
- Sugar to taste
- pinch salt
- Egg Wash -
- 1 egg
- 1/2 c cream
- 1 recipe German Sweet Pastry (Shortcrust)

Preparation
Step 1
Line a pie shell with German Sweet Pastry (Shortcrust). Mix together all filling ingredients above. Pour into pie shell. Mix 1 egg yolk with 1/2 c cream as "egg wash" pour over filling. Then top with strips of remaining pastry crust.
Bake
(Editor's Note: no temperature was given and no time... Based on other pie recipes I would say bake at 425 for 10 minutes reduce to 375 and bake for an additional 40 until it's golden brown.)
