Mama's Potato Soup

Simple potato soup. I guessed that it creates two servings based on the quantity. If I was going to make it, I might increase the quantity...
This is a very typical recipe from my grandmother... Minimal instructions

Ingredients

• 1/2 potato
• 2 T onion (chopped)
• Enough water to cover
• 1 c white sauce

Preparation

Step 1

Peel onions and potato and cut into small pieces. Add water and cook until tender. Make white sauce (editor's note... I assume she means Bechamel... Melt 1 T butter, add 1 T flour whisk until smooth and cook slightly. Add 7/8 c milk and stir until incorporated and thickens). Mix into potato mixture and mix well. Service with crackers.
