Ingredients
- 2/3 C shortening
- 2 eggs
- 3/4 C maple syrup
- 1/2 C milk
- 1 1/2 C flour
- 1 1/4 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp ground ginger
- 1/2 tsp ground allspice
- 1 C canned pumpkin
- 1 can (8oz) crushed pineapple,
- drained

Preparation
Step 1
in lg mix. bowl, beat shortening until light & fluffy
add eggs, one at time, beating well after each addition
mix. wll appear curdled
beat in syrup & milk
combine flour, baking powder, salt, baking soda, giner & allspice
add to shortening mix. & beat just until moistened
stir in pumpkin & pineapple
fill paper-lined muffin cups 2/3rd full
bake @350 20-25 min or until toothpick comes out clean
cool for 10 min before removing from pans to wire rack to cool completely
for frosting, in sm. mixing bowl, beat cream cheese & butter until fluffy
add confectioners sugar
beat until sooth
frost cupcakes
