Ingredients
- 1 bone-in beef rib roast
- 6-8 lbs
- 3 cloves garlic cloves, sliced
- 1 tsp pepper
- HORSERADISH CREAM
- 1 to 1 -1/2 C heavy whipping cream
- 2 TBL prepared horseradish
- 2 tsp red wine vinegar
- 1 tsp grd. mustard
- 1/4 tsp sugar
- 1/8 tsp salt
- dash pepper

Preparation
Step 1
place roast fat side up in shallow roasting pan
cut slits into roast
insert garlic slices
sprinkle w/ pepper
bake, uncovered @450 for 15 min
reduce heat to 325
bake 2-3/4 to 3-1/4 hours longer or until meat reaches desired
doneness
for med rare - 145 degrees
meanwhile, in sm. bowl, beat cream until soft peaks form
fold in horseradish, vinegar, mustard, sugar, S & P
cover & refrig for 1 hr
remove roast to serving platter - keep warm
let stand 15 min
serve w/ cream
