Ingredients

  • 1 lb. think sliced chicken breast, sut into bite size pieces
  • 1/2 tspn salt
  • 1/4 tspn pepper
  • 3 6-in whole wheat pita breads, toasted or 4 flat outs wraps
  • 12 cherry tomatoes, halved
  • 1 cucumber, peeled, halved, seeded, and chopped
  • 2 scallions, sliced
  • 1/4 cup lightly packed chopped fresh mint
  • 1/4 cup lightly packd fresh cilantro
  • 3 tbspn. lemon juice
  • 2 tspns olive oil
  • 1 tspn ground cumin

Preparation

Step 1

Sprinkle the chicken with 1/4 tspn salt and 1/8 tspn pepper. Spray a large nonstick skillet with pam and set over med-high heat. Add the chicken and cook, stirring until cooked through, about 5 mins. transfe to a serving bowl. set aside.

Tear the pitas into 1 inch pieces and add to the bowl along with the tomatoes, cucmber, scallions, mint, cilantro, lemon juice, oil, cumin , and the remaining 1/4 tspn salt and 1/8 tspn pepper. Toss to mix well.
