Legend has it that on the day the elves are packing the sleigh, the lady elves spend the day baking and packaging their delicate elven cookies. The cookies are then brought to Santa by the elven princesses just as the reindeer are about to dash away. Still warm from the elven ovens, and sprinkled with magic crystals, the cookies are to be brought to all the very special good boys and girls to be eaten on Christmas Day.

Ingredients

  • 3/4 lb butter, soft
  • 1/4 cup sugar
  • 1 tsp almond extract
  • 2 cup flour
  • 1 egg white
  • 1 Tbs sugar
  • 1/3 cup blanched almonds
  • Servings: 48
  • Tips
  • Almond Flour can be used for the blanched almonds. Much easier than chopping them so fine.

Preparation

Step 1

1. Mix first 4 ingredients thoroughly with hands. Chill dough. Roll out to 1/4 inch thickness. Cut into strips 2 1/2 inches long and 3/4 inch wide. Brush tops lightly with lightly beaten egg white. Sprinkle with a mixture of 1 Tbs. sugar and 1/3 cup finely chopped Almonds. Carefully transfer several strips at a time to an ungreased cookie sheet. Bake at 350F 17-20 mins, just until cookies begin to turn a very delicate brown. Makes about 4 dozen.
