Ingredients
- 3/4 OJ
- 1/2 cup water
- 3/4 tspn salt
- 1 cup whole-wheat couscous
- 1 tbspn olive oil
- 2 yellow squash cut into 1/4 inch slices
- 3 garlic cloves, sliced
- 1 tspn curry powder
- 1 can small white beans, rinsed and drained
- 1 can diced tomatoes
- 2 scallions sliced

Step 1
Bring the OJ, water and 1/2 tspn of the salt to a boil in a small saucepan. Add the couscous, cover and remove from the heat. let stand 5 mins. then fluff with a fork. Set aside
meanwhile, heat the oil in a large nonstick skillet over medium-high heat. Add the squash, garlic, curry powder, and the remaining salt. Cook stirring frequently, untilthe squash is softened, about 5 mins. Add the beans, the tomatoes with their juice, and the scallions; bring to a boil. Reduce the heat and simmer, stirring occasionally, about 5 mins. Transfer the couscous to a serving bowl and spoon the vegetable mixture on top.
