Ingredients

  • 2 large eggs at room temp
  • 1/2 tsp cream of tartar
  • 2/3 cups granulated sugar,superfine
  • 1 tsp vanilla extract
  • 1 cup semi sweet chocolate chips or finely chopped semi sweet chocolate

Step 1

Preheat oven to 350. Line 2 baking sheets with parch paper,set aside. In a mixer,beat egg whites until foamy. Add the cream of tartar and beat until fluffy but not at all dry. Don't overbeat. Add the sugar gradually,about 3 Tbs at a time. When 1/2 of ;the sugar has been added add the vanilla extract. Continue beating and adding remaining sugar in batches until all of the sugar is dissolved and the meringue is shiny. Gently fold in the choc. chips. Working one tsp at a time push a tsp of meringue from the tip of one tsp with the back of another tsp onto the line baking sheets,leaving 3" of space between cookies. Place baking sheets into preheated oven and turn oven off. Leave cookies undisturbed in the oven for at least 2 hrs and up to overnight or until cookies are crisp and dry.
