Ingredients
- 1 # green beans, cut bite size (about 4 cups)
- 1 sm onion, chopped
- 3 tomatoes, chopped
- 1/2 bunch parsley, chopped
- 1 T olive oil
- 1/2 tsp salt
- Dash pepper
- 1 cup stock
Preparation
Step 1
Cook all ingredients together at least 20 minutes, until the beans are tender, using just enough stock to prevent sticking. Stir from time to time. Makes 3 cups. Serves 4-6.
