- 2 T unsalted butter, softened
- 2 eggs at room temp, beaten
- 1 c half and half
- 1 c flour
- 1/2 t salt
- 1 T grated Parmesan cheese

Step 1
Preheat oven to 400. Liberally grease muffin tin with butter. In small bowl combine eggs and half and half, whisking until mixture is uniform color and texture. In large bowl sift together flour and salt until thoroughly blended then pour into egg mixture. Whisk to combine. Add Parmesan and whisk until only small lumps remain.
Preheat muffin pan in oven for 4 mins. Right before taking pan out of oven, whisk batter. Pour batter into hot pan filling each cup a little less than halfway.
Bake for 25 mins without opening oven door. They should be puffy, browned and crisp. Serve warm with butter.
