Ingredients
- 1 C cornmeal
- 1/4 t banking soda
- 1 t baking powder
- 1/2 t cayenne
- 2 t kosher salt
- 1 C AP Flour
- 2 T finely minced jalapeño
- 1/3 C finely grated onion
- 8:5 oz can creamed corn
- 1 1/2 C. buttermilk
- 8 wieners
- 8 sticks
- 4 T corn starch

Step 1
mix dry ingredients and set aside. Stir to combine , then add to dry, and mix u til incorporated. as little stirring as possible. let rest 10 minutes. put batter into drinking glass .
preheat oil to 375, dip weiners in corn starch, shake off excess, then into glass w batter. cook two at a time until golden brown , ( 4-5 mins) then onto wire rack to drain.
the wet and dry ingredients can be made ahead of time and stored as long as they aren’t mixed, once mixed they have to be used.
