Ingredients

  • 1/2 cup butter, softened
  • 1/3 cup brown sugar
  • 1/3 cup sugar
  • 2 teaspoons vanilla extract
  • 1 egg
  • 2/3 cup plain Greek yogurt (I use Chobani)
  • 2/3 cup strong brewed coffee, cooled
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 cup cocoa powder
  • 1/4 teaspoon nutmeg
  • 2 cups flour
  • 1/2 cup miniature chocolate chips
  • 8 oz. melting chocolate (CandiQuik)
  • sprinkles

Step 1

In a large bowl, sift together the baking powder, baking soda, salt, cocoa, nutmeg, and flour. Set aside. In a mixing bowl, beat the butter and sugars until creamy. Add the vanilla, egg, and yogurt and cream again.
Alternately add the flour mixture and coffee until everything is incorporated. Stir in the chocolate chips by hand. Spoon the batter into a large ziplock bag. Cut the tip off one corner and squeeze into the donut pan cavities. Fill at least 3/4 full. Bake at 375* for 9-10 minutes. Let cool in the pan for 2-3 minutes before removing to a wire rack. Cool completely.
Melt the chocolate according to the package directions. Dip the tops of the donuts and top with sprinkles. Let set. Store in a sealed container on the counter for 3-4 days. Makes 15 donuts.
