Ingredients
- 12 oz skinless, boneless chicken breast, cut into 1-inch pieces
- 12 0z chicken andouille sausage, sliced
- 1 (28 oz) can diced tomatoes with juice
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 stalks celery, chopped
- 1 cup low-sodium chicken broth
- 2 tsp dried oregano
- 2 tsp dried parsley
- 2 tsp Cajun seasoning
- 1 tsp cayenne pepper*
- 1/2 tsp dried thyme
- 1 cup dry brown rice

Preparation
Step 1
Place all ingredients except rice in slow cooker. Cook on low for 7-10 hours, or on high for 3-4 hours.
Cook rice according to package instructions. Stir rice into jambalaya and serve hot.
