Ingredients

  • Zest of 1 lime
  • 1/4 cup fresh squeezed lime juice
  • 2 tablespoons honey
  • 2 tablespoons roughly chopped fresh cilantro (leaves & stems)
  • 1 tablespoon roughly chopped fresh mint leaves
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon minced garlic
  • 1 small scallion (white & light green parts) thinly sliced
  • 1/4 to 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup olive or canola oil

Preparation

Step 1

Place all ingredients (in the order listed) EXCEPT for the oil in a blender.
Blend on medium high speed until smooth.
With the motor running, slowly pour in the oil until it's all incorporated.
Taste and adjust seasonings.
Will keep, refrigerated, for up to 5 days.
