Ingredients
- 2 pounds brussels sprouts, trimmed and halved
- 1 pound fingerling potatoes, halved lengthwise
- 2 tablespoons olive oil
- 1-1/4 teaspoons chopped fresh thyme
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper

Preparation
Step 1
1. Heat oven to 400 degrees F. Coat a large rimmed baking sheet with nonstick cooking spray.
2. Toss together Brussels sprouts, potatoes, oil, thyme, salt and pepper. Pour onto prepared pan; Roast at 400 degrees for 25 minutes or until tender.
