Ingredients
- 1.5 T Olive Oil
- 1 lb rutabaga, peeled & cut into 1" bits
- 3 c or 2 turnips, peeled & cut into 1" pieces
- 0.5 lb carrots, peeled & cut into 1" slices
- 0.5 lb parsnips, peeled & cut into 1" pieces
- 1 onion, peeled & cut into 1/8" wedges
- 2 t fresh thyme, chopped
- 1 c water
- 2 T honey
- 1 T sherry vinegar
- 2 T chopped fresh parsley

Preparation
Step 1
Preheat oven to 400F.
Toss the first 7 ingredients with salt & pepper to taste in a lg roasting pan.
Pour water over the vegetables, cover w/foil, and cook for 40min until just tender.
Whisk together the honey and the vinegar, uncover the vegetables, and stir in the honey & vinegar.
Cook for an additional 15-20 min until slightly golden. Sprinkle with parsley; serve.
