Ingredients

  • 1 cup rolled oats (Bob's Red Mill large flake)
  • 30 grams kamut flake cereal (Bulk Barn)
  • 50 grams oat bran cereal (Bulk Barn)
  • 1/4 cup extra virgin olive oil
  • 3 tbsp maple syrup
  • 1/2 tsp salt
  • 1/2 tsp coriander
  • 1/2 tsp turmeric
  • 1 tsp smoked paprika
  • 1 1/4 tsp chili powder
  • 1/4 tsp cayenne pepper
  • 1/2 tsp ginger powder
  • 25 grams pumpkin seeds
  • 30 grams coarsely chopped pecans

Step 1

Preheat oven to 350F. Line a large baking sheet with parchment paper.

In a large measuring cup or a bowl, combine oats, pumpkin seeds and pecans, salt, coriander, turmeric, smoked paprika, chili powder, cayenne and ginger. Add oil and maple syrup and mix well.

Spread in one even layer on prepared baking sheet and bake for 20 to 30 minutes until golden brown, stirring every 10 minutes so it bakes evenly. After 20 minutes, watch carefully to make sure it doesn't overcook.

Let it cool completely and store it in a cool, dry place.

Use in a wrap (apple and peanut-butter yogurt spread, for example), as a salad topper or simply stirred into or sprinkled over some plain yogurt. I've seen it used to top a fried or poached egg - looks yummy!
