Roasted Spaghetti Squash with Dried Cherries and Spinach 1 Picture

Ingredients

  • 1 med. spaghetti squash
  • 2 tbsp. extra virgin olive oil
  • 2 cloves garlic, minced
  • 1/4 cup dried cherries
  • 2 cups baby spinach
  • 1/2 tsp. salt
  • Pepper to taste
  • 2 tbsp. roasted walnuts, chopped

Preparation

Step 1

1. Preheat oven to 400 degrees. Slice spaghetti squash in half lengthwise and scoop out the seeds. Place on a baking sheet lined with a silicone baking mat or foil and roast for 45-50 minutes, or until fork-tender. Remove from oven and let cool for 10 minutes. Remove flesh with a fork and place in a large bowl.

2. Heat oil in a medium saucepan on medium heat. Add garlic and cook for 1 minute. Add cherries and baby spinach and cook until spinach is wilted.

3. Add spinach-cherry mixture to roasted spaghetti squash and season with salt and pepper. Toss together and garnish with walnuts. Serve immediately.
