  • 3-4 pound package pork tenderloin
  • 3 Tablespoons molasses
  • 3/4 teaspoon balsamic vinegar
  • 1/2 teaspoon worcestershire sauce
  • 1 clove garlic, minced
  • salt and pepper,
  • preferably fine sea salt
  • and hand-ground black peppercorns

Step 1

Preheat oven to 400 degrees. In a platter or pie-plate, combine molasses, vinegar, and garlic. Pat pork dry with paper towels, and then coat with molasses mixture. Sprinkle with salt and pepper, pressing the seasonings into the pork with your hands. Roast to 160 degrees internal temperature, about 22-25 minutes ( the center will be slightly pink.) Let stand 5-10 minutes before slicing.
