Ingredients

  • 2 lbs clean, scrubbed new red potatoes
  • 2-6 eggs
  • 1 lb bacon, cooked extra crispy but not burnt
  • Green onion, finely chopped
  • 1 stalk celery, finely chopped
  • 1 cup sour cream
  • 1 cup mayo or miracle whip

Preparation

Step 1

Cook potatoes until tender but firm. Drain and set into frig to cool. Boil eggs, peel and chop. Cook bacon and drain well. Chop the cooked potatoes, leaving skin on. Add eggs, bacon, onion and celery. Add sour cream and mayo. (can use less than recipe calls for) Chill for at least 1 hour before serving.
Can also add:
pickle relish
chopped carrots
shredded cheddar cheese
