Chicken-Butternut Tagine

One of the best recipes I have made in the past couple of months--this is a yummy and healthy tagine and nice alternative to lamb and apricot.

Ingredients

  • 1 large onion
  • 2 tsps ground cumin
  • 1 tsp paprika
  • 1 tsp turmeric
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/4 tsp ground ginger
  • 2 garlic cloves, minced
  • 3 large chicken breasts, cut into bite-sized pieces
  • 4 1/2 cups butternut squash and/or sweet potatoes, cubed (or use 1 bag pre-cubed fresh squash and sweet potato)
  • 2 cups chicken stock
  • 8 pitted dried plums, chopped

Preparation

Step 1

Heat Dutch oven over medium heat, spray with cooking spray. Add onion, cook 8 minutes or until golden. Stir in spices and chicken, stirring constantly and cook for 1-2 additional minutes.

Add broth, squash (and sweet potatoes), dried plums and bring to the boil. Cover, reduce heat to medium low, and simmer 10-15 minutes or until squash is tender.

Serve with couscous and side salad or vegetables.
