Ingredients

  • 3 C. water
  • 1 C. grits
  • 1/2 tsp salt
  • 1 lb bulk sausage
  • 1 c. Mexican cheese
  • 1 c. green chiles
  • 1/2 c. cooked collards or spinach
  • 1/4 t. Tabasco
  • 3 eggs
  • 1 C. sour cream

Preparation

Step 1

Cook grits according to package directions. While grits are cooking, brown sausage in fry pan and break up into very small crumbles.

In separate bowl, beat eggs, add cooked spinach/collards. Stir in grits being careful to not cook eggs. Add sausage, cheese, tabasco and sour cream and mix all ingredients well.

Bake at 375 degrees for about 45 minutes or until brown and cooked through

Add additional salt and pepper if needed. Serve with butter if needed.
