Ingredients
- 1 medium spaghetti squash, roasted
- 1 ripe avocado, peeled
- 1 large clove garlic, peeled
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- fresh cilantro or basil - I use whichever I have on hand, but basil is my favorite- about 5-6 stems

Preparation
Step 1
Roast squash and set aside to cool.
While squash is cooling, combine all other ingredients in blender.
Pulse a few times until herbs are incorporated into the sauce.
When squash is cool enough to handle, scrape inside with a fork to produce spaghetti shaped strands.
In a large bowl combine squash and cream sauce. Stir until all squash is coated.
Garnish with fresh chopped herb of choice
