  • 1 lb ground beef extra lean
  • 1 14 oz can Old El Paso enchilada sauce
  • 1 10 oz can condensed mushroom soup- healthy request
  • 1 8 oz can tomato sauce
  • 1 small can sliced lovies
  • shredded cheddar cheese
  • light sour cream
  • flour totillas

Preparation

Step 1

Brown ground beef well, drain of excess fat. Stir in tomato sauce, mushroom soup and simmer on low for 5 minutes up to 35 minutes, stirring frequently.

On center of tortilla pace 1 T sour cream, some cheese, 1 ladle enchilada filling. Roll up with top facing down. Top with more sauce, cheese and some olives. Microwave for 40 seconds.
