Ingredients
- 2 lbs center-cut boneless pork loin
- 2 large eggs
- 2 c buttermilk
- 2 cloves garlic, crushed
- kosher salt and freshly ground black pepper
- 1/4 teaspoon cayenne pepper
- 2 sleeves saltines (about 80 crackeres)
- 2 c instant flour (wondra)
- 4 soft hamburger buns, split
- 1/3 cup mayo
- 3 tablespoons yellow mustard
- 1/2 head lettuce
- 2 tomatoes, sliced
- 1 red onion, sliced
- pickles

Preparation
Step 1
cut the pork crosswise into 4 equal piecies. flatten on cutting board to 1/4 inch thick. whisk eggs, buttermilk, garlic, salt, pepper and cayenne. Add pork, cover and marinade in refrig for four hours. Pulse crackers coarse and put in shallow dish. remove pork from marinade, remove excess water, dredge in flour, dip in buttermilk mixture again and then crackers. heat oil and cook. about three minutes in fryer.
