Ingredients
- 1/2 lb ground beef, cooked and drained.
- 3 cups chicken broth
- 3/4 cups chopped onion
- 4 cups diced peeled potatoes
- 3/4 cups shredded carrots
- 1/4 cup flour
- 3/4 cup diced celery
- 8 oz. Velveeta, cubed
- 1 tsp basil
- 1 1/2 cup milk
- 1 tsp parsley flakes
- 3/4 tsp salt
- 5 Tbsp margarine, divided
- 1/4 tsp pepper

Step 1
Saute onion, carrots, celery, basil and parsley in 2 Tbsp butter for about 10 minutes. Add broth, potatoes and beef; bring to a boil. Reduce heat, cover and simmer for 12 minutes or until potatoes are tender. Melt 3 Tbsp butter, add flour and add to soup and bring to a boil. Cook and stir for 2 minutes. Reduce heat to low. Add cheese, milk, salt and pepper; cook until cheese melts.
