- 2 cups Almond Flour
- 1 /2 cup Coconut Flour
- 1 /2 tsp Baking Soda
- 1 /2 tsp Xanthum Gum
- Pinch of salt
- 1 /4 cup Coconut Oil, softened
- 1 /2 cup Butter, softened
- 3 /4 cup Monk Fruit
- 2 tsp Vanilla Extract
- 2 Eggs
- 3 /4 c unsweetened shredded coconut
- Frosting
- 4 oz Cream Cheese
- 1/2 cup Monk Fruit
- 2 tbsp Butter, softened
- 2 tbsp Heavy Cream
- 1 tsp Vanilla extract

Preparation
Step 1
Preheat oven to 350F and line baking sheet with parchment paper.In a large bowl, mix together almond and coconut flours, baking soda, xanthan gum, and salt. Set to the side.In a seperate bowl, using a mixer, cream together the coconut oil, butter, sugar substitute, vanilla extract, and eggs. Once creamed together, slowly start mixing in the dry ingredients. Then, fold in shredded coconut.Drop the cookies onto the baking sheet and bake for 12 minutes or until golden around the edges.
FROSTING
Add the cream cheese, monk fruit, butter, heavy cream, and vanilla extract into a bowl and mix until thickened.
