Ingredients

  • 1 lb ground beef
  • 1/2 cup chopped onion
  • 1 can tomato paste (6 oz)
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 1/2 cup mayonnaise
  • 1/4 cup flour
  • 2 cups milk (or 1 cup milk and 1 cup fat free half and half)
  • 2 eggs
  • 1/3 cup Parmesan cheese
  • 1/4 tsp ground nutmeg
  • 2 cup elbow macaroni - cooked and drained

Preparation

Step 1

1. Brown beef and onion. Drain fat. Stir in tomato paste, salt, and cinnamon. set aside.
2. Combine mayonnaise and flour. Gradually stir in milk. Cook and stir over medium heat until thick (do not boil) nutmeg, egg, and Parm cheese. Gradually stir in sauce (be careful not to harden eggs)
3. Add macaroni. Spoon half of mixture into a 2 qt oblong baking dish. cover with meat mixture. Top with remaining macaroni.
4. Bake at 325* for 45 minutes or until set.
