Ingredients
- GUMBO ROUX:
- 3/4 cup vegetable oil
- 1 cup flour
- 1/4 cup green pepper, finely diced
- 1/4 cup onion, finely diced
- 1/4 cup celery, finely diced
- 1 cup frozen okra, chopped
- 3 cup chicken broth
- 4 cups chicken
- 1/4 cup creole seasoning
- GUMBO
- Cooked shrimp
- Diced chicken
- Andouille or smoked sausage
- Craw fish tail meat
- White rice

Preparation
Step 1
ROUX
In large sauce pot heat oil over med heat. Add flour, stirring constantly until the roux turns a deep rich chocolate color with a consistency like melted peanut butter. Add remaining ingredients and stir until everything is well mixed. Reduce heat and simmer until the mixture is thick and stew-like. (About one hour or more). Set aside.
GUMBO
T assemble gumbo, add the meats and shrimp to the roux mixture. Sprinkle with a gumbo file seasoning
