Roasting Fresh Pumpkin
This is easier than it sounds! Cut the pumpkin in half, scoop out the seeds (don't discard, you can roast them for a great snack! Sprinkle little salt & paprika on them!) Put pumpkin halves on a cookie sheet face down and bake in hot oven (400) for about 40 minutes, best thing is to eyeball it, if you can stick a fork into it easily it's done.
Set aside and let cool, once cool scoop out insides and pop into food processor until you get a nice smooth texture.

- 3 large eggs, lightly beaten
- 1.5 tsp cinnamon
- 3/4 tsp ginger
- 1/4 tsp nutmeg
- 1/4 tsp ground cloves
- 1/4 tsp ground allspice
- 1/8 tsp salt
- 1.5 cups heavy cream
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 2 . cups pumpkin puree
- Preheat the oven to 375.

Step 1
Combine spices into small bowl and put aside
Place eggs into a large bowl and beat with wisk slowly add cream, sugars and mix well, no lumps!
Add pureed pumpkin to medium saucepan, add egg mixture & spices, mix it up good!
Stir constantly for about 10 minutes on medium to low heat. Mixture will start to thicken, if you have a candy thermometer temp. should be about 150
Pour mixture into pie crust and bake on center rack for about 40-45 minutes or until a knife towards the center comes out clean
place on rack to cool and serve however you'd like! Ice cream, whipped cream, or just plain, whatever makes you happy!
If you want to make your own whipped cream all you need is some heavy cream, vanilla, and sugar. Pour desired amount of heavy cream into a bowl, splash in a bit of vanilla, and sugar to your liking. Mix on high speed until cream firms up and develop nice whipped peaks. Refrigerate until ready to use.
I also toast nuts to sprinkle on top of whipped cream. Again, easy breezy, get a cookie sheet and place chopped nuts into 425-degree oven. Keep an eye on them, it only takes a couple of minutes until they get a nice golden brown, remove and cool. Sprinkle on top of pie for a nice crunchy texture. I like hazelnuts the best!
