- 3 lbs potatoes, peeled and roughly chopped
- 1 kale bunch, stems removed and chopped small
- 1 cup milk
- 1 onion, peeled and chopped small
- 1/2 cups butter
- salt and pepper

Directions
Place the potatoes in a pot, cover with cold water, place on high heat and cover. Boil until tender.
While the potatoes are cooking, heat a sauté pan over medium high heat and add ¼ cup of the butter. Sauté the kale and onion until soft, about 10 minutes, season with salt and pepper and set aside.
Drain the potatoes, add the milk and the rest of the butter and mash until smooth. Season them with salt and pepper and mix in the cooked kale and onions.
It is very ok to serve with more melted butter on the side, in fact it is encouraged.
