  • 2 lbs Yukon Gold potatoes, washed and cubed
  • 1 onion, chopped
  • 4 tbs canola oil
  • paprika or chopped chives for garnish
  • salt and pepper to taste

Directions

Boil the potatoes until soft, about 20 minutes. Drain and cool.

Heat 1 tablespoon of the the oil in a large skillet over medium heat. Add the onion and cook until softened and golden brown, about 6 minutes. Transfer to bowl.

Add the rest of the oil to the skillet. Add the potatoes and press down with spatula. Cook, without moving, until underside of potatoes is brown, 5 to 7 minutes. Turn potatoes, pack down again, and continue to cook until well browned and crisp, 5 to 7 minutes. Reduce heat to medium-low and continue cooking, stirring potatoes every few minutes, until crusty and golden on all sides, 9 to 12 minutes.

Mix in the onion, season with salt and pepper to taste. Garnish with the paprika or green onions.
